Ingredients
- 4 medium-sized potatoes, peeled and cubed
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 onion, finely chopped
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped for garnish
Instructions

Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds. Fry until they splutter.

Add the chopped onion, green chilies, and ginger-garlic paste. Sauté until the onion turns translucent.

Add turmeric powder, red chili powder, and salt. Mix well.

Add the cubed potatoes and toss until they are coated with the spice mixture. Cook for 5 minutes.

Reduce the heat to low, cover the pan, and let the potatoes cook for about 20-25 minutes or until they are tender, stirring occasionally.

Sprinkle garam masala and mix well. Cook for another 2-3 minutes.

Garnish with freshly chopped coriander leaves.

Serve hot with rice or roti.
