Serves:

Ingredients

  • 2 cups of mixed vegetables (carrots, cauliflower, bell peppers, etc.)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of coconut milk
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of ginger paste
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a slow cooker, combine the mixed vegetables, onion, garlic, coconut milk, curry powder, turmeric powder, cumin powder, coriander powder, ginger paste, soy sauce, salt, and pepper.

  2. Stir well to combine all the ingredients.

  3. Cover the slow cooker and cook on low heat for 4 hours or until the vegetables are tender.

  4. Once cooked, taste and adjust the seasoning if needed.

  5. Serve the slow cooker vegetable curry over steamed rice or with naan bread.

  6. Garnish with fresh cilantro.
