Ingredients
- 4 boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups sliced mushrooms
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook them in the skillet for about 4-5 minutes per side, until browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Sauté for about 2 minutes until fragrant and translucent.

Add the sliced mushrooms to the skillet and cook for another 3 minutes until they soften and release their liquid.

Pour in the diced tomatoes and chicken broth. Stir in the dried thyme and rosemary. Season with salt and pepper to taste.

Bring the sauce to a simmer and return the chicken breasts to the skillet. Cover and cook for about 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.

Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, continue to simmer the sauce until it thickens slightly.

Serve the chicken chasseur with the sauce spooned over the top. Garnish with chopped parsley.
