Ingredients

  • 200g self-raising flour
  • 100g shredded suet
  • 100g caster sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 100g raisins
  • 100g currants
  • 1 tbsp black treacle
  • 1/2 pint milk

Instructions

  1. In a large mixing bowl, combine the flour, suet, sugar, and spices.

  2. Add the raisins, currants, black treacle, and milk. Stir well to form a sticky dough.

  3. Prepare a cloot (cloth) by boiling it in water and dusting it with flour.

  4. Place the dough in the center of the cloth, fold it over, and tie securely with string.

  5. Fill a large pot with water and bring it to a boil. Carefully lower the clootie dumpling into the pot.

  6. Reduce the heat to a simmer and let the dumpling steam for 3 hours, adding more water as needed.

  7. After 3 hours, carefully remove the dumpling from the pot and unwrap it from the cloth.

  8. Serve thick slices of the clootie dumpling warm with custard or cream.
