How To Make Amaretti Biscuits

  • 2 cups almond flour
  • 1 ½ cups powdered sugar
  • 2 egg whites
  • 1 teaspoon almond extract
  • ¼ teaspoon salt
  • ¼ cup granulated sugar for rolling

Instructions

  1. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the almond flour and powdered sugar.

  3. In a separate bowl, beat the egg whites until frothy. Add the almond extract and salt, and continue to beat until stiff peaks form.

  4. Gently fold the egg white mixture into the almond flour mixture until well combined.

  5. Scoop the dough into small portions and roll them into 1-inch balls. Roll each ball in granulated sugar to coat.

  6. Place the coated balls onto the prepared baking sheet, spacing them about 1 inch apart.

  7. Bake for 20-25 minutes, or until the biscuits are golden brown and crisp on the outside.

  8. Allow the biscuits to cool completely on the baking sheet before removing and serving.
