How To Make Ackee & Saltfish

Ingredients

  • 2 cups of ackee fruit
  • 1 lb of salted codfish
  • 1 onion, sliced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 2 scallions, thinly sliced
  • 2 sprigs of thyme
  • 2 tbsp of vegetable oil
  • 1 tsp of black pepper
  • Hot pepper sauce (optional)

Instructions

  1. Soak the salted codfish in water overnight, changing the water several times to remove excess salt.

  2. Drain the codfish and flake it into small pieces.

  3. Heat the vegetable oil in a large skillet over medium heat.

  4. Add the onions, bell peppers, and garlic to the skillet and sauté until they are softened and translucent.

  5. Add the codfish to the skillet and cook for about 5 minutes, stirring occasionally.

  6. Add the tomatoes, scallions, thyme, and black pepper to the skillet and continue to cook for another 5 minutes.

  7. Gently fold in the ackee fruit, being careful not to break it up too much.

  8. Cover the skillet and cook for an additional 10-15 minutes, until the ackee is tender and cooked through.

  9. Serve hot with boiled dumplings or fried plantains. Add hot pepper sauce for extra heat, if desired.
