Ingredients
- 2 boneless, skinless chicken breasts
- 2 bell peppers (red, yellow, or orange), thinly sliced
- 1 red onion, thinly sliced
- 3 cups mixed salad greens
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions

Preheat a grill or grill pan over medium-high heat.

Season the chicken breasts with salt, pepper, and oregano.

Grill the chicken for about 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it.

In a large bowl, combine the sliced peppers, red onion, salad greens, olives, and feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
