Ingredients

  • 1 small pumpkin, peeled and chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • Croutons or pumpkin seeds for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat.

  2. Add the onion and garlic and cook until soft.

  3. Add the pumpkin and broth, bring to a boil, and then reduce heat to a simmer.

  4. Cover the pot and cook until the pumpkin is soft and tender, about 30 minutes.

  5. Remove from the heat and let it cool for a few minutes.

  6. Using an immersion blender or transferring small batches to a blender, puree the soup until smooth.

  7. Stir in the heavy cream and season with salt and pepper.

  8. Serve hot with croutons or pumpkin seeds on top.
