How To Make Pumpkin Soup Recipe
This creamy and aromatic pumpkin soup is the perfect comfort food for chilly nights.

Ingredients
- 1 small pumpkin, peeled and chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 2 tbsp of olive oil
- Salt and pepper to taste
- Croutons or pumpkin seeds for garnish
Instructions

Heat the olive oil in a pot over medium heat.

Add the onion and garlic and cook until soft.

Add the pumpkin and broth, bring to a boil, and then reduce heat to a simmer.

Cover the pot and cook until the pumpkin is soft and tender, about 30 minutes.

Remove from the heat and let it cool for a few minutes.

Using an immersion blender or transferring small batches to a blender, puree the soup until smooth.
