Preheat oven to 350°F (175°C).

Spread pumpkin seeds on a baking sheet and roast for 10-12 minutes, until golden brown and fragrant.

Let the seeds cool slightly, then transfer to a food processor or blender.

Add olive oil and salt to the seeds.

Blend on high speed until a smooth and creamy butter forms, scraping down the sides as needed.

Transfer the pumpkin seed butter to a jar or container and store in the refrigerator.
