  • 2 cups pumpkin seeds
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Spread pumpkin seeds on a baking sheet and roast for 10-12 minutes, until golden brown and fragrant.

  3. Let the seeds cool slightly, then transfer to a food processor or blender.

  4. Add olive oil and salt to the seeds.

  5. Blend on high speed until a smooth and creamy butter forms, scraping down the sides as needed.

  6. Transfer the pumpkin seed butter to a jar or container and store in the refrigerator.
