Easy Huevos Rancheros Recipe

With egg, salsa, and beans, this easy Mexican breakfast is a festive start to the day.

Ingredients

  • 1 medium avocado
  • 6 large eggs
  • 1/4 cup water
  • 1 tbsp margarine , or butter
  • 1 cup mid salsa
  • 19 oz black beans, rinsed and drained
  • 3/4 cup Mexican cheese blend, shredded
  • 8 corn tortillas, warmed

Instructions

  1. Mash avocado in bowl with fork.

  2. In a separate bowl, mix eggs and water with wire whisk. In a nonstick 10-in. skillet, melt margarine over medium heat.

  3. Add egg mixture and cook 1 to 1 1/2 minutes or until eggs just begin to set, stirring constantly with heat-safe spatula or wooden spoon.

  4. Spoon salsa over eggs and top with beans and cheese.

  5. Cover and cook 2 to 3 minutes longer or until cheese melts and beans are heated through, but do not stir. 

  6. Serve egg mixture with tortillas and avocado.
