How To Make Huevos Rancheros
Traditional Mexican breakfast dish with eggs, black beans, and a fiery tomato sauce.
Serves:
Ingredients
- 4 eggs
- 1 can of black beans, drained and rinsed
- 1 tbsp of olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 tsp of chili powder
- 1/2 tsp of cumin
- 1/2 tsp of smoked paprika
- 1 cup of diced tomatoes
- 1/4 cup of chopped cilantro
- Salt and pepper to taste
- Tortillas for serving
Instructions

Heat the olive oil in a skillet over medium heat.

Add the onion and bell pepper and cook until soft.

Add the garlic, chili powder, cumin, and smoked paprika and cook for one minute.

Add the black beans and diced tomatoes and let simmer for 5 minutes.

Use a spoon to create four wells in the mixture. Crack an egg into each well.

Cover the skillet and poach the eggs for 5 minutes or until the whites are set but the yolks are still runny.

Season with salt and pepper to taste.

Garnish with chopped cilantro and serve with warm tortillas.
