How To Make Le Peep’s Huevos Rancheros Recipe
A classic Mexican breakfast dish featuring a tortilla topped with refried beans, eggs, cheese, and a spicy tomato sauce.

Ingredients
- 4 corn tortillas
- 1 can of refried beans
- 8 large eggs
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of chopped cilantro
- 1 jalapeño, diced
- 1 tomato, diced
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Heat olive oil in a skillet over medium heat. Add garlic and jalapeño and cook for 1-2 minutes.

Add diced tomato, salt, and pepper. Cook for 5 minutes or until tomato is softened.

Heat refried beans in a separate skillet over medium heat for 5-7 minutes.

Place tortillas on a baking sheet and bake for 5 minutes or until crispy.

Fry eggs in the same skillet used for the tomato sauce.

Spread refried beans on top of each tortilla. Add two fried eggs on top of the beans.

Spoon tomato sauce over the eggs and sprinkle shredded cheese on top.

Place baking sheet back in the oven and bake for 5 minutes or until cheese is melted.

Top with chopped cilantro and serve hot.
