- 4 large eggs
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 jalapeno, seeded and diced
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 small flour tortillas
- 1/4 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco or feta cheese
- Optional toppings: avocado slices, sour cream, hot sauce
Instructions

Heat the vegetable oil in a large skillet over medium heat. Add the onions, garlic, and jalapeno, and cook until softened, about 5 minutes.

Stir in the diced tomatoes, cumin, chili powder, salt, and black pepper. Simmer for 10 minutes.

While the sauce is simmering, heat another skillet over medium heat and fry the eggs to your desired doneness.

Warm the flour tortillas in the oven or on a stovetop until soft and pliable.

To assemble, place a tortilla on each plate, spoon some of the tomato sauce over it, and top with a fried egg. Sprinkle with chopped cilantro and crumbled cheese. Serve with optional toppings, if desired.
