Snack Time Granola Bars Recipe

Granola bars are a sweet treat that’s easy to grab on the go.

Stay filled and healthy with these granola bars. The sweetness from the coconut and chocolate chip will make this an absolute favorite among kids.

  • 2 sticks butter , or margarine
  • cup corn syrup
  • 1 cup brown sugar
  • 1 tsp. vanilla extract
  • 4 cups oatmeal
  • 1 cup flaked coconut
  • ½ cup walnuts , or pecans, chopped
  • 8 oz. marshmallows
  • 4 cups Rice Krispies cereal
  • ½ cup chocolate chips
  • ½ cup peanut butter


  1. In a large saucepan, over low heat, melt and stir butter, syrup, sugar and vanilla.
  2. Stir in oats, coconut and nuts.
  3. Cook over low heat, stirring constantly for about 3 minutes.
  4. Stir in the marshmallows and when melted stir in the Rice Krispies.
  5. Using a buttered spatula or wooden spoon, press mixture evenly into buttered 9x13 inch pan.
  6. Cool. In a small pan melt chocolate chips and peanut butter.
  7. Spread over oatmeal mixture.
  8. Cool again and cut into squares.
