Ingredients

  • 1 cup rolled oats
  • 1 cup apple juice
  • 1 cup Greek yogurt
  • 1 apple, grated
  • ½ cup blueberries
  • ¼ cup chopped nuts (optional)
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, combine rolled oats and apple juice. Let it sit for 5 minutes to allow the oats to soak.

  2. Add Greek yogurt, grated apple, blueberries, chopped nuts (if using), honey, and vanilla extract to the bowl. Mix well.

  3. Divide the mixture into 4 serving bowls or jars.

  4. Cover and refrigerate overnight or for at least 4 hours to allow the flavors to meld and the oats to soften.

  5. Serve cold and enjoy!
