Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup packed brown sugar
  • 1 and 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.

  2. In a large bowl, mix together flour, white sugar, salt, and baking powder.

  3. In a separate bowl, whisk together oil, egg, milk, and vanilla extract.

  4. Combine wet and dry ingredients and mix until just combined.

  5. In a small bowl, mix together brown sugar and cinnamon.

  6. Pour half of the batter into the prepared loaf pan, then sprinkle half of the cinnamon-sugar mixture over the batter.

  7. Pour the remaining batter into the pan and spread evenly. Top with the rest of the cinnamon-sugar mixture.

  8. Use a knife to gently swirl the cinnamon-sugar mixture through the batter.

  9. Drizzle melted butter over the top of the batter.

  10. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  11. Let cool in pan for 5-10 minutes before removing and slicing.
