Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup buttermilk
  • 1 egg, beaten
  • 1 tbsp sugar
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together the cornmeal, flour, baking powder, baking soda, salt, onion powder, garlic powder, and cayenne pepper.

  2. In a separate bowl, whisk together the buttermilk, egg, and sugar.

  3. Add the wet ingredients to the dry ingredients and mix until just combined.

  4. Heat about 2 inches of vegetable oil in a deep skillet or pot to 375°F.

  5. Using a small cookie scoop or spoon, drop the batter into the hot oil and fry for about 2-3 minutes, or until golden brown and crispy.

  6. Remove from the oil with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

  7. Serve hot with your favorite dipping sauce.
