- 2 cups dark rye flour
- 1 cup bread flour
- 2 teaspoons active dry yeast
- 1 teaspoon salt
- 1 tablespoon honey
- 1 1/4 cups warm water
Instructions

In a large bowl, combine the dark rye flour, bread flour, yeast, and salt.

In a separate small bowl, mix together the honey and warm water until the honey is dissolved.

Pour the honey mixture into the dry ingredients and stir until a rough dough forms.

Turn the dough out onto a floured surface and knead for about 5 minutes, until the dough is smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat your oven to 375°F (190°C).

Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan.

Cover the loaf pan with the towel and let the dough rise for an additional 30 minutes.

Bake the bread in the preheated oven for 45-50 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
