How To Make Caribbean Coconut Bread

Ingredients
- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup coconut milk
- 1/4 cup vegetable oil
- 2 eggs, beaten
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C) and grease a loaf pan.

In a large bowl, combine the flour, shredded coconut, sugar, baking powder, and salt.

In a separate bowl, mix together the coconut milk, vegetable oil, eggs, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Pour the batter into the greased loaf pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
