Ingredients

  • 1 lb beef liver, sliced
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp butter
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. In a shallow dish, mix together flour, salt, and black pepper. Dredge the beef liver slices in the flour mixture, shaking off any excess.

  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the liver slices and cook for 2-3 minutes per side until browned. Transfer the liver to a plate and set aside.

  3. In the same skillet, melt the remaining 2 tablespoons of butter. Add onion and mushrooms, cooking until they start to soften, about 5 minutes. Stir in minced garlic and cook for an additional minute.

  4. Pour in the beef broth and Worcestershire sauce. Add thyme, paprika, and cayenne pepper. Bring the mixture to a simmer and let it cook for 5 minutes, stirring occasionally.

  5. Return the cooked liver slices to the skillet and spoon the onion-mushroom gravy over them. Cover the skillet and cook for 10-12 minutes, or until the liver is cooked through and tender.

  6. Serve the smothered beef liver hot with mashed potatoes, rice, or your favorite side dish.
