Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted black olives
  • 1 cup artichoke hearts, quartered
  • 1 tbsp dried oregano
  • 1 cup chicken broth
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and black pepper.

  2. Heat the olive oil in a large skillet over medium-high heat.

  3. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, or until browned. Remove from the skillet and set aside.

  4. In the same skillet, add the sliced onion and minced garlic. Cook until the onion is softened and golden brown.

  5. Add the cherry tomatoes, olives, artichoke hearts, and dried oregano to the skillet. Cook for 2 minutes, stirring occasionally.

  6. Pour in the chicken broth and lemon juice. Stir to combine.

  7. Return the chicken breasts to the skillet and spoon the sauce over them. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.

  8. Serve the Chicken Provençal with olives and artichokes over cooked rice or pasta. Garnish with freshly chopped parsley.
