Beefy Enchilada Nachos Recipe

How To Make Beefy Enchilada Nachos

These enchilada nachos are loaded with beef, corn, tomatoes, beans, and salsa and is packed with flavors good enough to liven up any party.

Preparation: 20 minutes
Cooking: 10 minutes
Total: 30 minutes



  • 1lbground beef
  • 1medium onion,chopped
  • 15ozred enchilada sauce,(1 can)
  • 15ozblack beans,(1 can), rinsed and drained
  • 14½oztomatoes,(1 can), diced, drained
  • 15ozcorn,(1 can)
  • 3ozolives,(1 can), sliced
  • 2cupscheddar cheese
  • 1tspsalt
  • ¼tsppepper
  • 13ozTOSTITOS® Original Restaurant Style Tortilla Chips,(1 bag)

For Optional Toppings:

  • avocado,diced
  • sour cream
  • cilantro,chopped
  • green onion,chopped


  1. In a large skillet, cook the ground beef and onion until the ground beef is no longer pink and the onion is tender. Drain.

  2. Add the red enchilada sauce, black beans, diced tomatoes, corn, and olives. Bring the mixture to a boil and simmer on medium for 3 to 5 minutes or until the sauce starts to thicken. Add in 1 cup of cheddar cheese and stir until melted.

To Assemble:

  1. Put half of the TOSTITOS Original Restaurant Style Tortilla Chips on the bottom of a large plate. Put half of the meat sauce on top. Sprinkle with ½ cup of cheese. Repeat layers.

  2. Top with desired toppings and enjoy!
