Ingredients

  • 4 slices of ham, diced
  • 4 cups of potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of baked beans
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 4 eggs

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large skillet, cook the diced ham over medium heat until crispy. Remove and set aside.

  3. In the same skillet, add the diced potatoes, onion, and garlic. Cook until the potatoes are golden brown and crispy, about 10 minutes.

  4. Stir in the baked beans, paprika, dried thyme, and cooked ham. Cook for an additional 5 minutes, until heated through.

  5. Meanwhile, heat a separate non-stick skillet over medium heat. Crack the eggs into the skillet and cook until desired doneness.

  6. Serve the ham & potato hash topped with a healthy ‘fried’ egg on each plate.
