How To Make Mediterranean Bulgur Salad
A refreshing and nutritious salad featuring bulgur wheat, fresh vegetables, and a flavorful dressing.
Serves:
Ingredients
- 1 cup bulgur wheat
- 1 1/2 cups water
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup diced cucumber
- 1/2 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
Instructions

In a medium saucepan, bring water to a boil. Add in the bulgur wheat and reduce the heat to low, cover and simmer for 10 minutes.

In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.

In a large mixing bowl, toss together the cooked bulgur wheat, diced onion, red bell pepper, cucumber, and parsley.

Drizzle the dressing over the salad and toss to coat.

Sprinkle the crumbled feta cheese over top and serve.
