  • 1 cup bulgur
  • 2 cups water
  • 2 large beetroots, cooked and diced
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 1/4 cup sliced almonds
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


  1. In a medium saucepan, bring the water to a boil. Add the bulgur and reduce the heat to low. Cover and simmer for 15-20 minutes, until the bulgur is tender and the water is absorbed.

  2. In a large bowl, combine the cooked bulgur, diced beetroot, crumbled feta cheese, chopped mint, and sliced almonds.

  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve the salad chilled or at room temperature.
