How To Make Minty beetroot, feta & bulgur salad

Ingredients
- 1 cup bulgur
- 2 cups water
- 2 large beetroots, cooked and diced
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup sliced almonds
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions

In a medium saucepan, bring the water to a boil. Add the bulgur and reduce the heat to low. Cover and simmer for 15-20 minutes, until the bulgur is tender and the water is absorbed.

In a large bowl, combine the cooked bulgur, diced beetroot, crumbled feta cheese, chopped mint, and sliced almonds.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
