How To Make Bulgur Wheat, Date & Clementine Salad

Ingredients
- 1 cup bulgur wheat
- 1 cup boiling water
- 1 cup pitted dates, chopped
- 4 clementines, peeled and segmented
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- 1/4 cup extra-virgin olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions

Place bulgur wheat in a bowl and cover with boiling water. Let it sit for 10 minutes or until the water is absorbed.

Fluff the bulgur wheat with a fork and let it cool for a few minutes.

In a large serving bowl, combine the bulgur wheat, chopped dates, clementine segments, mint, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
