How To Make Bulgur and Cucumber Salad
A refreshing and healthy salad made with bulgur wheat and crisp cucumber, tossed in a zesty dressing.
Serves:
Ingredients
- 1 cup bulgur wheat
- 2 cups water
- 1 cucumber, diced
- 1 small red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 1 garlic clove, minced
- salt and pepper to taste
Instructions

In a medium saucepan, bring 2 cups of water to a boil. Add the bulgur wheat, reduce heat to low and simmer for 15-20 minutes, or until tender.

Drain any excess liquid from the bulgur and transfer to a large mixing bowl. Add the diced cucumber, red onion, parsley, and mint.

In a small bowl, whisk together the olive oil, lemon juice, and garlic. Pour over the salad and toss to combine. Season with salt and pepper to taste.

Serve chilled or at room temperature.
