Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 2 cups diced tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped green onions
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Place the bulgur wheat in a large bowl and pour the boiling water over it. Cover and let it sit for 10 minutes, or until the bulgur is tender.

  2. Fluff the bulgur with a fork and let it cool to room temperature.

  3. Add the diced tomatoes, cucumbers, parsley, mint, and green onions to the bowl with the bulgur.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  5. Pour the dressing over the salad and toss to combine.

  6. Serve immediately or refrigerate until ready to serve.
