Serves:

Ingredients

  • 1 cup barley
  • 1/2 cup bulgur
  • 2 cups water
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a medium pot, bring water to a boil. Add barley and bulgur, reduce heat, cover, and simmer for 20 minutes or until grains are tender. Drain any excess water and let cool.

  2. In a large mixing bowl, combine barley, bulgur, mint, parsley, dill, and chives.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

  4. Serve chilled or at room temperature.
