How To Make Smoked Trout & Bulgur Wheat Salad

Ingredients
- 2 cups bulgur wheat
- 4 smoked trout fillets
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Cook the bulgur wheat according to package instructions. Once cooked, fluff it with a fork and let it cool.

Meanwhile, remove the skin from the smoked trout fillets and flake the meat into bite-sized pieces.

In a large bowl, combine the cooled bulgur wheat, smoked trout, cucumber, red bell pepper, red onion, dill, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss gently to combine.

Serve the smoked trout and bulgur wheat salad chilled or at room temperature.
