  • 1cupred wine vinegar,or cider vinegar
  • 2tbspolive oil
  • 1tbspsugar
  • ½tspsalt
  • ¼tspfreshly ground black pepper
  • 3tomatoes,(large, ripe)
  • ½white onion,(medium)
  • 2tbspfresh cilantro,chopped
  • 1jalapeno chili,(small)

Instructions

  1. In a medium bowl, whisk vinegar, oil, 2 tablespoon water, sugar, salt, and pepper until blended.

  2. Add remaining ingredients and toss until well combined.

  3. Cover and refrigerate at least 2 hours, or up to 24 hours, before serving.
