How To Make Mini Almond Orange Cakes

The perfect winter cake is here. These almond orange cakes are perfectly aromatic, sweet, and tender. Bake them in individual pans or in one large pan.

Preparation: 10 minutes
Cooking: 25 minutes
Chill and Cool Time: 3 hours 40 minutes
Total: 4 hours 15 minutes

Ingredients

  • ¾cuporange peel,candied
  • 1tbsporange liqueur,(Cointreau or Grand Marnier)
  • ¾cupbutter
  • ½tspsalt
  • ¾cupconfectioner’s sugar
  • 3eggs
  • ½cupfresh orange juice
  • 2tsporange zest,grated
  • cupsall purpose flour,unbleached
  • ½cupground almonds,blanched
  • 1tspbaking powder

Instructions

  1. Preheat the oven to 375 degrees F.

  2. Grease five 4-inch kugelhopf pans, or one 8-inch kugelhof pan.

  3. Macerate the candied orange peel in the liqueur for 1 hour at room temperature.

  4. Combine the butter, salt, confectioner’s sugar, and eggs in the bowl of an electric mixer.

  5. Use the wire whisk attachment to whisk together till light and smooth.

  6. Blend in the orange juice and orange zest.

  7. Transfer the mixture to a larger bowl, if necessary, and fold in the flour, almonds, baking powder, and macerated orange peels

  8. Set aside 15 peels, for garnish.

  9. Cover the batter with plastic wrap and place in the refrigerator to rest for 2 hours.

  10. If using 4-inch kugelhopf pans, place 3 orange peels inside each pan and fill ¾ full with batter

  11. Bake for 25 minutes, or until golden brown.

  12. Transfer to a wire rack and cool for 10 minutes before removing from the pans.

  13. If using an 8-inch kugelhopf pan, place all the orange peels inside, fill ¾ full with batter, and bake for 35 minutes, or until golden brown.

  14. Let cool 15 minutes on the wire rack before removing from the pan

  15. Cool fully before serving, or store in an airtight container at room temperature for up to 2 days.
