  • 15ozchickpeas,(1 can), drained, juice reserved
  • 4cupsfresh spinach,loosely packed
  • ½cupartichoke hearts
  • 2tbsptahini
  • 2tbsplemon juice
  • 2tbspolive oil
  • 2clovesgarlic,peeled and smashed
  • salt and pepper,to taste


  1. Combine all ingredients in a food processor, and blend until smooth.

  2. If you desire a thinner consistency, add in a few extra tablespoons of the reserved chickpea juice.
