How To Make Harissa and Sweet Potato Salad Recipe

A delicious and healthy salad with a spicy kick.

Serves:

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt to taste
  • 2 cups baby spinach
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1 tbsp harissa paste
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F/200°C.

  2. Toss sweet potatoes with olive oil, paprika, cumin and salt.

  3. Roast sweet potatoes for 25 minutes, until tender.

  4. In a large bowl, mix together spinach, parsley, cilantro and red onion.

  5. In a small bowl, whisk together harissa paste, honey and lemon juice.

  6. Add roasted sweet potatoes and harissa dressing to the large bowl.

  7. Toss to combine.

  8. Divide salad among serving plates.

  9. Sprinkle with crumbled feta cheese.
