How To Make Harissa and Roasted Red Pepper Pasta

A spicy and flavorful pasta dish with a roasted red pepper and harissa sauce.

Ingredients

  • 12 oz. pasta
  • 1 red onion, chopped
  • 1 red bell pepper, roasted and chopped
  • 3 garlic cloves, minced
  • 2 tbsp. olive oil
  • 2 tbsp. harissa paste
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup vegetable broth
  • 1/4 cup fresh parsley, chopped
  • Crumbled feta cheese, for serving

Instructions

  1. Cook the pasta according to package instructions.

  2. In a large skillet, sauté the onion and roasted red pepper in olive oil for 5 minutes over medium heat.

  3. Add garlic, harissa, smoked paprika, salt, and black pepper. Cook for 2 minutes.

  4. Add vegetable broth and reduce heat to low. Simmer for 5-7 minutes.

  5. Drain the pasta and add it to the skillet with the sauce.

  6. Toss to coat and cook for a few minutes until heated through.

  7. Serve with fresh parsley and crumbled feta cheese.
