This delicious casserole is perfect for a Thanksgiving side dish. It’s made with fresh zucchini, creamy sauce, and crispy topping.

Ingredients

  • 3 medium zucchinis, thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 2 tbsp butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, mix zucchini, onion, garlic, sour cream, 1/4 cup Parmesan cheese, salt and pepper.

  3. Pour mixture into a greased 9×9 casserole dish.

  4. In a separate bowl, combine bread crumbs, remaining Parmesan cheese, and melted butter. Sprinkle evenly over the top of the casserole.

  5. Bake for 50 minutes, or until the top is golden brown and zucchini is tender.

  6. Let cool for a few minutes before serving.
