Ingredients

  • 1 cup of wild rice
  • 2 cups of chicken broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1/2 cup of dried cranberries
  • 1/2 cup of chopped pecans
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.

  2. Rinse wild rice in cold water and drain.

  3. In a saucepan, bring chicken broth to a boil. Add wild rice, cover, and reduce heat to low. Let simmer for 45-50 minutes until tender.

  4. In a separate pan, sauté onions and garlic in olive oil until translucent.

  5. Add celery and carrot and cook until tender.

  6. Combine cooked wild rice, sautéed vegetables, cranberries, pecans, salt, and pepper in a casserole dish.

  7. Bake for 15-20 minutes until heated through and golden brown on top.
