Ingredients

  • 1 large butternut squash, peeled, seeded, and cubed
  • 1 small yellow onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • 1/2 tsp of dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet over medium heat, sauté onions and garlic in olive oil until tender.

  3. Add cubed butternut squash to the skillet and cook for about 5 minutes.

  4. Season with salt, pepper, and dried thyme. Mix well.

  5. Pour heavy cream into the skillet and stir to combine.

  6. Transfer the butternut squash mixture to a greased 9×9 inch baking dish.

  7. Sprinkle grated Parmesan cheese over the top of the squash mixture.

  8. Bake for 50-60 minutes or until the casserole is golden brown on top and the squash is fork-tender.
