How To Make Tangy Tomato Soup

A tangy and flavorful soup perfect for any chilly evening.

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28oz) crushed tomatoes
  • 1 cup vegetable broth
  • 1 tsp sugar
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 cup heavy cream
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, and cook until onion is translucent.

  3. Add crushed tomatoes, vegetable broth, sugar, basil, and oregano.

  4. Bring to a simmer, and let cook for 15 minutes.

  5. Use an immersion blender to puree soup until smooth.

  6. Add heavy cream, salt, and pepper.

  7. Cook for an additional 5 minutes.
