Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Bat-shaped cookie cutter

Instructions

  1. Preheat oven to 375°F.

  2. In a medium bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

  3. Beat in the egg and vanilla extract.

  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually blend the dry ingredients into the peanut butter mixture.

  5. Roll out the dough on a floured surface to 1/4 inch thickness. Cut out bat shapes using a cookie cutter.

  6. Place the cookies 2 inches apart on a baking sheet. Bake for 10-12 minutes or until golden brown.

  7. Remove from oven and cool on wire rack.
