How To Make Beef Barbacoa Tacos

Spicy, tender, shredded beef barbacoa loaded onto soft tortillas and topped with fresh cilantro and lime.

Ingredients

  • 2 lbs beef chuck roast, trimmed
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 1/2 cup beef broth
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tbsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 small corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. In a slow cooker, combine the lime juice, apple cider vinegar, beef broth, garlic, chipotle peppers, cumin, oregano, salt, and black pepper. Stir to combine.

  2. Add the beef to the slow cooker and coat it with the mixture.

  3. Cook on low for 6-8 hours, or until the beef is tender and falls apart easily.

  4. Remove the beef from the slow cooker and shred with two forks. Place the shredded beef back into the slow cooker and toss with the remaining sauce.

  5. Warm the tortillas in a dry skillet or in the oven.

  6. Assemble the tacos by placing the beef onto the tortillas. Top with fresh cilantro and a squeeze of lime juice.

  7. Serve and enjoy!
