How To Make Pork Cassoulet

Serves:

Ingredients

  • 1.5 lbs of pork shoulder, cut into cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 325°F (160°C).

  2. In a large Dutch oven, heat olive oil over medium heat. Add pork cubes and cook until browned on all sides. Remove from the pot and set aside.

  3. In the same pot, add onion, carrots, and garlic. Cook until softened, about 5 minutes.

  4. Return the pork to the pot. Add thyme, bay leaf, chicken broth, and beans. Season with salt and pepper.

  5. Bring the mixture to a simmer. Cover the pot and transfer to the preheated oven.

  6. Bake for 2 hours, or until the pork is tender and the flavors are melded together.

  7. Remove the bay leaf and taste for seasoning. Adjust if needed.

  8. Serve hot, garnished with chopped parsley.
