Ingredients

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • Fresh parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper.

  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 6-8 minutes on each side, until golden brown and cooked through. Remove chicken from skillet and set aside.

  3. In the same skillet, add onion and garlic. Cook until onion is translucent and fragrant.

  4. Add mushrooms and cook until they have released their liquid.

  5. Pour in chicken broth and bring to a simmer. Cook for 5 minutes.

  6. Stir in heavy cream and thyme. Simmer for another 5 minutes, until sauce has thickened.

  7. Return chicken to the skillet and spoon mushroom sauce over each piece. Cook for an additional 2 minutes to heat through.

  8. Serve chicken topped with fresh parsley.
