Serves:

Ingredients

  • 500g mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them crackle.

  2. Add onions, garlic, and ginger. Saute until onions turn translucent.

  3. Add the mushroom slices and cook for 5 minutes until they release their moisture.

  4. Add tomato puree and all the spices – turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

  5. Cook for another 10 minutes until the mushrooms are cooked through and the curry thickens.

  6. Garnish with fresh coriander leaves.

  7. Serve hot with steamed rice or roti.
