How To Make Carrot & Coriander Soup

Ingredients
- 4 large carrots, peeled and chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 4 cups of vegetable broth
- 1 teaspoon of ground coriander
- Salt and pepper to taste
- Fresh coriander leaves for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until onions are translucent.

Add the carrots and ground coriander to the pot, and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until carrots are tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Season with salt and pepper to taste.

Serve the carrot and coriander soup hot, garnished with fresh coriander leaves.
