How To Make Baby Bella Mushroom Soup Recipe
A hearty and creamy soup featuring Baby Bella mushrooms and fresh herbs.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 16 oz Baby Bella mushrooms, sliced
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup heavy cream
- Salt and pepper, to taste
Instructions

In a large pot, heat olive oil over medium heat.

Add onion and garlic and sauté for 5 minutes or until softened.

Add sliced mushrooms and cook for an additional 5-7 minutes until mushrooms are tender and lightly browned.

Pour in vegetable broth and add thyme and rosemary. Bring to a boil and reduce heat to simmer for 15 minutes.

Using an immersion blender, blend the soup until smooth. Return the soup to the pot and stir in heavy cream.

Season with salt and pepper to taste. Serve hot.
