How To Make Lentil and Vegetable Stir-Fry

Serves:
Ingredients
- 1 cup dry lentils, rinsed
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped kale
- 2 tbsp soy sauce
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions

In a medium saucepan, bring lentils and vegetable broth to a boil. Reduce heat and simmer for 15-20 minutes until tender. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Add bell pepper, onion, and garlic and sauté for 3-4 minutes until tender.

Add chopped kale and sauté for another 2-3 minutes until wilted.

Add cooked lentils, soy sauce, cumin, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 3-4 minutes until heated through.

Serve hot and enjoy!
