Ingredients
- 1 small head of cauliflower, cut into florets
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking oil for frying
Instructions

Steam or boil the cauliflower florets until they are tender. Drain and let cool slightly.

In a large bowl, mash the cauliflower using a fork or potato masher until it resembles a coarse puree.

Add breadcrumbs, Parmesan cheese, beaten eggs, chopped parsley, garlic powder, onion powder, salt, and pepper to the bowl. Mix well until everything is combined.

Shape the mixture into small round croquettes or patties, using about 2 tablespoons of the mixture for each croquette.

Heat cooking oil in a deep frying pan or skillet over medium heat. Add the croquettes to the hot oil and cook for about 3-4 minutes on each side or until they turn golden brown.

Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil.
