How To Make Salmon, Strawberry & Fennel Salad

Ingredients
- 4 salmon fillets
- 2 cups of baby spinach
- 1 cup of sliced strawberries
- 1 fennel bulb, thinly sliced
- 1/4 cup of crumbled feta cheese
- 1/4 cup of chopped almonds
- 2 tbsp of olive oil
- 2 tbsp of balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat the grill to medium heat. Season the salmon fillets with salt and pepper.

Grill the salmon for about 4-5 minutes per side or until cooked through. Set aside to cool.

In a large bowl, combine the baby spinach, sliced strawberries, and fennel.

In a separate small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.

Pour the dressing over the salad and toss to combine.

Divide the salad onto plates and top with grilled salmon fillets.

Sprinkle each plate with crumbled feta cheese and chopped almonds.
