How To Make Warm Potato & Cherry Tomato Salad

Ingredients
- 500g baby potatoes, halved
- 250g cherry tomatoes
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons balsamic vinegar
- 2 tablespoons fresh basil, chopped
Instructions

Preheat the oven to 200°C (400°F).

In a large bowl, combine the halved baby potatoes, cherry tomatoes, olive oil, minced garlic, dried thyme, salt, and pepper. Toss well to coat.

Spread the potato and tomato mixture onto a baking sheet and roast in the preheated oven for 20-25 minutes, or until the potatoes are tender and lightly browned.

In a small bowl, whisk together the balsamic vinegar and fresh basil.

Remove the roasted potatoes and tomatoes from the oven and transfer them to a serving dish. Drizzle the balsamic vinegar and basil mixture over the top and gently toss to combine.

Serve the warm potato and cherry tomato salad immediately.
