How To Make Warm Potato & Cherry Tomato Salad

Ingredients

  • 500g baby potatoes, halved
  • 250g cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a large bowl, combine the halved baby potatoes, cherry tomatoes, olive oil, minced garlic, dried thyme, salt, and pepper. Toss well to coat.

  3. Spread the potato and tomato mixture onto a baking sheet and roast in the preheated oven for 20-25 minutes, or until the potatoes are tender and lightly browned.

  4. In a small bowl, whisk together the balsamic vinegar and fresh basil.

  5. Remove the roasted potatoes and tomatoes from the oven and transfer them to a serving dish. Drizzle the balsamic vinegar and basil mixture over the top and gently toss to combine.

  6. Serve the warm potato and cherry tomato salad immediately.
